Each variety of the grapes which we harvest fermentates separately. Syrah is collected at first, then Grenache and finally Mourvedre.
We are going to blend our different cepages by the end of the year in order to create and recreate year after year the cuvées of our range. Even though it is a very pleasant and great moment to act, that has to be really sincere in order to balance the wines. Our oenologist is a great professional support at that specific and additional choice.
